Classic orange dal

Serves 4
100 g orange lentils
400 ml water
½ teaspoon salt
¼ teaspoon turmeric
Ingredients for finishing
2 teaspoons whole cumin
100 ml vegetable ghee or vegetable oil


Place the lentils, water, salt and turmeric in a pan and bring to the boil.  Boil until the lentils melt to form a soup consistency, you may need to add more water and check for salt.
Once the lentils are cooked remove them from the heat. In a shallow pan heat the oil until smoking, quickly add the cumin, fry until the cumin pops and blackens, then pour the oil straight into the lentils allow it to sizzle before stirring in and serving.
