Watermelon and Papaya Salad

 Serves 4-6     
1 small papaya approximately 400-500g
400g watermelon
½ lime zest
1 teaspoon lime juice
2 teaspoons cider vinegar
½ teaspoon Chat Dust
1 finely sliced green chili (optional)
2 sprigs fresh mint, finely sliced (leaves only)

1 large papaya approximately 1kg
800g watermelon
1 lime zest
2 teaspoon lime juice
4 teaspoons cider vinegar
1 teaspoon chat masala
2 finely sliced green chilies (optional)
4 sprigs fresh mint, finely sliced (leaves only)

Method
Peel and cut the papaya in half, deseed then dice into 1-2cm cubes.  Cut the peel from the watermelon, deseed and dice into 1-2 cm cubes, combine with the papaya, (if you choose a small melon then the seeds should be small enough for you not to have to remove them). Sprinkle the chat masala, lime juice, vinegar, green chili, mint leaves and lime zest over the papaya and melon, gently stir to combine the ingredients. Serve immediately.

Notes
Add some small feta cubes for a great starter or main salad for lunch on a hot day NB not for dairy free or vegan
