Sesame Drizzle

Serves 4-6 as a light drizzle    

Ingredients
2 teaspoons tahini
1 green finger chilli, seeds removed (optional)
Juice of ½ lemon
2-3 tablespoons hot pre boiled water
salt to taste    

Method
Deseed and chop the chilli very finely, if you are using it. You can also leave the seeds in if you prefer a hotter drizzle.  In a mixing bowl combine the tahini, lemon juice, adding hot water to mix until you have a drizzle consistency.  Lastly add the chopped chilli and salt a little at a time to your required taste. Set aside to cool

Notes

  • Makes a good stock dressing as you can vary the amount of water and lemon juice to make it thicker or thinner.
  • Goes well with various salads, see salad chapter
