Simple fried rice (vegan)
Df, Ef, Nf, Ve, V, Gf
Serves 4 as a side dish
| 100 millilitres rape seed oil
500 grams of cooked basmati rice
2 teaspoons panch puran
1 teaspoon Kathmandu masala
1 teaspoon salt, or to taste
One medium onion
Heat the oil in a wok or deep frying pan until it’s shimmering add the panch puran, fry until the seeds start brown and pop about 30 seconds. Add the onion to the pan and fry until it’s dark brown but not back, add the bus cooked rice. Stir to make sure the rice is coated in the oil and there are no lumps left, add the Kathmandu masala and salt then continue to fry for 4 to 5 minutes until the rice is well heated all the way through. If you like your rice crispy you can it fry for longer.
- This rice is great served with rich curries for a special occasion.
- For an unexpected brunch, top the rice with crispy bacon and a poached egg.
