Chicken in a lightly spiced marinade with ready prepared fresh green chillies, peppers, tomato and spring onion

Heat 2-3 tablespoons of oil (preferably rapeseed or sunflower oil) in a wok or large frying pan on medium heat, until the oil is shimmering (hot but not quite smoking). Add the chilli and sizzle until the chilli skin starts to crack and brown, you can remove the chilli or leave it in for a hotter dish. Add all the contents of the chicken box and stir-fry until the chicken is just cooked through (roughly 3-5 minutes), add the chopped vegetables and cook until they are properly warmed through and softening at the edges, but still with a bit of crunch in the middle. Finally check and season with salt to your taste, rest for 2-3 minutes and serve.
