Steamed fragrantly spiced vegetable dumplings, ready for you to refry into Kothay

For the best results, heat in a small frying pan with a good fitting lid. momos cook best when they’re packed close together
Brush the bottom of the cold pan with a generous coating of cooking oil, place your momos as close as possible in the pan in a single layer with the flat side down and pour 50 ml | 3 tablespoons of water around the momos. If you are using a larger pan and there’s a lot of space around the momos add an extra 30 ml | 2 tablespoons of water. Secure the lid on the pan and place the pan on a high heat. Once the pan is hot turn the heat down to medium and cook until the water has evaporated. You can tell the water has evaporated because the cooking sound will change from a bubbling to a continuous crackle this usually takes 7-10 minutes. Take the lid off and shake the pan to release the momos, check they are piping hot all the way through. Turn the kothay momos onto a serving dish to rest for 2-3 minutes.
